Honey Sweet Potato Biscuits
Makes 12 outstanding biscuits at 92 milligrams sodium each.
2 cups flour
1 tablespoon baking powder
1/4 cup shortening
2 tablespoons grated orange peel (2 teaspoons dried)
3/4 cup sweet potatoes, mashed (One large sweet should do it. Cook it in about 5 minutes in the microwave.)
1/3 cup honey
1/2 cup milk

Combine flour and baking powder; cut in shortening until mixture resembles size of small peas. Add peel, sweet potato and honey; mix well. Add enough milk to make soft but not sticky dough. Knead lightly on a flour-dusted surface. Divide dough into 12 equal parts. Form into flattened balls. Place on ungreased baking sheets. Bake in preheated 400 degree oven 14-16 minutes or until lightly browned. Don't overbake! Serve warm.
