Onion Salsa
Makes 2 cups, 12 milligrams sodium per tablespoon
2 medium sweet red or purple onions, finely chopped (about 1-1/2 cups)
1 large tomato, seeded and finely chopped
1/4 cup chopped green onions or chives (chives grow like weeds in a garden!)
2 large cloves garlic, finely minced
1/4 cup lemon juice
2 tablespoons chopped fresh cilantro or flat parsley (the herb garden sure is handy)
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon low-sodium soy sauce (measure very carefully)
dash cayenne pepper

Combine in glass container with cover and chill at least a couple hours to blend flavors.
